"Bite-Sized Brilliance": Refined Business Thinking from Churchill Street
April 29, 2025
When Carly Gatzlaff opened Churchill St. in Shoreview, she wasn’t just starting a restaurant, she was building something her community asked for. Frustrated by the absence of walkable dining options, Carly got involved with the city’s economic commission and, during the pandemic, began working with consultants to bring her vision to life. What was once a hardware store is now a thoughtfully designed, light-filled space with an inviting patio and a layout that balances energy with calm. It’s a space as much about connection as it is about food.

Raised in North Dakota, Carly’s work ethic and passion for local dining culture shine through in her daily involvement, from bussing tables to managing operations. Her vision for Churchill St. centers around community, both in how the space feels and how it functions. “From the beginning, we trained our team that we’re here to do good in the world,” she says. That passion carries through in every detail, from the natural lighting and welcoming atmosphere to the culture of kindness her staff embodies.
Churchill St.’s commitment to sustainability and local partnerships is woven into its foundation. The restaurant sources from farms and producers across Minnesota and Wisconsin, from Willa’s Oat Milk in Shoreview to Peterson Craftsman Meats in Osceola, WI. Carly also partners with organizations like the Cafesjian Art Trust and Second Harvest Heartland’s Kitchen Coalition, donating a portion of each seasonal soup sale and organizing bi-monthly volunteer service. It’s a full-circle approach where business uplifts the broader ecosystem.
Looking ahead, Churchill St. is expanding its seasonal menu offerings and planning events like an outdoor summer party and patio concerts. With eyes on live music, local speakers, and more community workshops, Carly is focused on growing intentionally. Her advice to aspiring business owners? “Get involved in the community you're in, it makes everything run smoother and helps everyone rise together".
Make sure to keep an eye on Churchill St.’s website for the latest local happenings, and don’t forget to swing by for a bowl of their seasonal soup. Come for the soup, stay for the community.
